Christmas is officially over and now is the time when we all start to get back on track with our health. Unfortunately, this is very hard to do, especially during the extremely cold months of January and February when all you want to do is curl up in your pjs, watch Friends on Netflix all while eating cookies and popcorn on the couch. This recipe is a perfect, hearty meal that will satisfy your cravings and feed your body with nutrients it needs.
I N G R E D I E N T S
1 small butternut squash
1 C orzo
3 tbs olive oil
3 garlic cloves, minced
2 C shredded spinach
1 tsp salt
1 tsp pepper
2 grilled chicken breasts
I N S T R U C T I O N S
1. Chop the butternut squash and pour 1 tbs of olive oil, the salt and pepper over it. Roast in the oven at 400 degrees for 45 minutes.
2. Begin cooking the orzo the way the box instructions describe. When the pasta is done, pour over the spinach until it is wilted.
3. Heat the remaining 2 tbs of olive oil with the minced garlic on the stove and pour over orzo and spinach.
4. Stir in the squash and chicken until evenly distributed and serve.
