Tomatoes: 4 Recipes

I adore tomatoes; of all the fresh produce that comes out of the ground, it has to be my favorite. Because of my love for tomatoes, I eat them quite often.  After a whole Summer of eating tomatoes the same way almost every time, I decided to ask my lovely Instagram and Facebook friends how they eat tomatoes.  They had some of the best recipe ideas, so I decided to make a post with all four new ways I've found to eat tomatoes, I'd love to hear even more ideas if you have some!

T U N A   S T U F F E D   T O M A T O E S

This is very self explanatory:  core the tomatoes, make the tuna how you like it (I like mine pretty plain) and put it inside the tomatoes.  This was incredibly delicious and would make an easy, healthy lunch.

Another simple idea that I never thought of until a lovely Instagram friend suggested it.  There's so many different options: mayonnaise, cheese, toasted bread, choose!

B A K E D   G A R L I C   T O M A T O E S


This lovely idea is a perfect transition into the Fall months.  It's hot, hearty, and bold in flavor.  Cut thick slices of tomatoes and put them in a baking dish, sprinkle garlic salt and pepper over them, sprinkle parmesan cheese on top, then bake on low for 10-15 minutes.

Another versatile and flavorful recipe involving the tomato.  Choose any vegetables you like: eggplant, zucchini, squash, potatoes...or all of them! Slice the vegetables and layer them in a loaf pan, sprinkle a seasoning of your choice on top and then finish it off with cheese. Bake at about 425 for 15 minutes or until the cheese begins to brown on top.  

I am extremely glad that I went through social media to find new ways to cook tomatoes, I will definitely be putting this tool to use for my next food endeavor! Thanks to Allie, Natalie, Mary Lou and Ashley for your awesome ideas, my stomach has been very happy this week.
